Sorry I haven’t blogged for a couple of days. Worked late on Tuesday night then had an awful day yesterday.

I wasn’t feeling 100% as it was, then around 3.30pm my mum asked me to call her. Turned out my father had been taken into A&E with chest pains, shoulder pains and dizziness. Not fun. He’d had the symptoms at work around 9am but tried to play them off. The HR lady then saw him and said he had to go straight to the hospital! They did a bunch of blood works and an ECG which thankfully didn’t show signs of a heart attack. They decided to keep in him for observations and because they wanted to redo the test twelve hours later as that would hopefully show what had gone on. This was the scariest time for me; I’ve never seen my dad like this. Thankfully we were able to take him home sometime after midnight. The second set of tests showed that it had been an angina attack so he was given a spray in case it happens again and some tablets, he has been prescribed some good bed rest too.

Needless to say I am absolutely shattered today as even after I got home I barely slept a wink. So this is all until I get some much needed shut eye.

Just another (not) manic Monday

A very uneventful day today so probably not the most thrilling blog post I’m afraid. Went to work as per usual and did some driving around. I didn’t get a chance to do my usual 4pm swim today, so made the husband go with me after dinner. He didn’t really appreciate it beforehand but pretty sure he’s glad we went now. I decided to try the outside pool as the covers were off and I could see steam/mist over it so thought it must be quite warm. It was not. I’m not saying it was unpleasantly cold, it just wasn’t fun. I think I did about 2 lengths outside before giving up going back indoors. The husband seemed to quite enjoy using the outside pool though.

I was booked into a spin class tomorrow but due to prior commitments I can’t now, rebooked for next week so I will let you know how horrendous that is after.

First post – weekend update

Inspired by Morgan Stewart of http://www.boobsandloubs.com/ I have decided to keep a sort of online diary, blog type thing. I’m not sure if you’ll find it interesting. I hope you will and apologise if you don’t.

So I thought I’d start my blog off by just filling you in on my oh so exciting weekend.

When I finished work on Friday I went straight to the gym with the determination that I will tone up for summer! If I start now I might actually make it. My instructor gave me a new workout regime which basically involves me stretching myself in ways I never thought possible on something called a trx machine. If I don’t break my nose doing one of the exercises it’ll be a miracle! Afterwards, I went home and met up with the husband and we headed to town to buy me a new engagement ring as I lost my original one – a story for another post! Once I had decided on a gorgeous custom ring we decided to stay out and celebrate. We hit the usual spots in Trinity including Alchemist, Angelica & 360, grabbed a bite to eat in Chicago Rib Shack then decided to try one of the newer offerings called Tapped http://tappedleeds.co.uk/ I highly recommend this place! For the husband and friend it had craft American ales on tap, and these are constantly changing so you will get to try a real wide array of beers! For me it was prosecco at £3.60 a glass so how could I say no?! I also had the overwhelming desire to touch the copper fermenters, despite them being partitioned off & the thermometer reading 60+ degrees!

Myself, the husband and his friend then went to try out Roxy Ball Room which looks amazing – beer pong, pool, table tennis etc – but decided to call it a night instead. Solid decision.

Saturday I woke up feeling exactly as I thought I would – not great. Although the Marmite croissants that the husband brought to be in bed along with copious amounts of tea definitely helped. We then dragged our butts to the gym where I showed the husband my new routine and I realised I had already forgotten how to do at least one of the exercises! A very yummy omlette in the gym cafe followed which pretty much saw off any remaining signs of not feeling 100%. The husband then wanted to go see a friend who lives locally so we stopped by there to regale him tales of the night before for a couple of hours. The husband would have happily stayed sat there for the next 10 hours but we had a party to attend so I made him move from the sofa as I need to put on the war paint! We went to my godmothers for a curry night, or if you’re like me and don’t eat anything with flavour, nann bread night. Champagne was flowing and it was great to see people again but after the night before I didn’t hit it as hard as I usually would when I’m at her house. That lady knows how to throw a party!

Sunday morning rolled around; along with the realisation I had done no housework in a SIGNIFICANT amount of time. This is always a depression realisation because when I leave it a while it means I have to spend 3+ hours deep cleaning the house. Which I hate. But clean I did, and now the house looks gorgeous once again and if anyone touches anything I will not be impressed. The husband even helped and did the kitchen. Lots of washing got done too, which is equally exciting for all involved. After a spot of lunch a rather long walk loomed ahead of us as we had to go retrieve the car from the venue of last nights party. The walk ended up being 5 miles long and pretty straight into the gusty Yorkshire wind the entire time. Fun. Once we got home I decided I was done for the weekend and refused to move except to make our very yummy dinner of Jamie Oliver’s cauliflower mac & cheese.

Ingredients

  • 8 rashers of bacon
  • 1 large head of cauliflower
  • 500g dried macaroni
  • Olive oil as required
  • 250g mature Cheddar cheese
  • 4 thick slices of bread
  • large sprig of fresh rosemary
  • 2 large clove of garlic
  • 250g crème fraîche
  • Salt & pepper
  • Parmesan cheese, to serve

Method

  1. Fill the kettle with water and bring to the boil. Preheat the oven on to 220ºC/425ºF/Gas 7.
  2. Lay the bacon in the dish you will eventually be using for the pasta mixture and put on the top shelf of the oven to pre-cook.
  3. Trim off any very coarse or spoiled outer leaves from the cauliflower and remove the tough end of the stalk. Quarter the head or break it up into large pieces. Place in a large saucepan, stalks downwards and add the pasta.
  4. Pour over the boiling water to cover the ingredients, season, add a little olive oil and place on a high heat. Stir well until it reboils, and cook with the lid just askew.
  5. Grate the cheddar cheese in the food processor and tip into a bowl. Add the crème fraiche and crushed garlic.
  6. Remove the bacon from the oven. Using a food processer, process well with the bread and rosemary leaves. Add a good drizzle of olive oil to bind the ingredients into a coarse breadcrumb consistency.
  7. When the cauliflower and the pasta is just cooked (a knife inserted into the cauliflower stalk should slip in easily), reserving the cooking water, drain it all through a colander into a large bowl.
  8. Tip the pasta mixture into the dish the bacon was cooked in.
  9. Add about 400ml (just under a pint) of the reserved cooking water.
  10. Stir in the crème fraîche and cheese mixture, breaking the cauliflower up with a fork or potato masher until you have bite-sized pieces.
  11. Season. The sauce should be loose and if necessary, add another splash of the reserved cooking water.
  12. Spread the mixture out evenly in the dish and scatter over the breadcrumb topping.
  13. Cook on the top shelf of the oven for around 8-10 minutes, or until the topping is golden and the mixture bubbling.
  14. To serve grate over some Parmesan.

Preparation time: 20 minutes

Cooking time: 19 minutes

Me and the husband sat and watched Wreck It Ralph whilst eating, this was followed by me retiring to bed to paint my nails Nails Inc Slone Avenue and watch the E! channel as the husband is adamant it will melt his brain.
